Mornings he was in the kitchen with “Nonna” the grandmother, helping to prepare the family meals each day..
This is an experience I can relate to, so we decided to both cook chicken cutlets with a potato contorni as a side. Mark’s are Nonna’s Lazio recipes. Mine are my Mom’s chicken cutlet and potato croquette, as they are still served in her birth village of Mirabella Eclano in Campania..

INGREDIENTS.
• 12 ounces Pappardelle noodles.
• 5 Tablespoons Bella Sun Luci Extra Virgin Olive Oil, divided.
• 2 large chicken breasts.
• Salt and pepper to taste.
• ½ lg yellow onion, diced.
• 5 garlic cloves, minced.
• 1 cup white wine.
• 1 ½ cups heavy cream.
• ½ bag fresh baby spinach (3 ounces).
• 1 ¼ cup Bella Sun Luci Italiano Dip.
• ½ cup grated Parmesan cheese.
• Several basil leaves, chiffonade, for garnish.
• A few basil florets for garnish.
INSTRUCTIONS.
• Cook pasta according to directions..
• Season the chicken breasts with salt and pepper and cook them in 2 Tablespoons of olive oil, starting on a high flame, until browned on both sides..
• Turn flame to medium and cook until done, approximately 3-5 minutes per side..
• Remove to a plate to rest and set aside..
• In the same pan as the chicken, sauté the onion until it’s golden brown..
• Add the garlic and sauté for 1 minute until light yellow..
• Add wine to the pan. Bring to a boil and reduce until ¾ of the wine is gone..
• Add the cream. Bring to a boil, then turn to a simmer and reduce until ¼ of the cream is gone..
• Turn heat off and add spinach..
• Stir in until just incorporated, then add the Italiano Dip..
• Lastly, add the Parmesan cheese..
• Slice the chicken..
• To serve, top the pasta with chicken and then pour sauce over both..
• Garnish with fresh basil and serve immediately..

Pour olive oil on the chicken breast or breasts in a bowl. Toss to coat. In a separate bowl, combine all-purpose flour, nonfat dry milk, poultry seasoning, paprika, granulated garlic and ground pepper. Coat the oiled chicken breasts with the seasoned flour. In a conventional oven, bake on an ungreased baking sheet at 400 degrees Fahrenheit for 45 to 55 minutes until golden brown.

Add the chicken breasts and let it sit for 15-30 minutes. Preheat oven to 450F and coat a baking dish with cooking spray. Then, remove the chicken from the brine and pat the chicken dry with a paper towel. Place the chicken in a single layer in a prepared baking sheet and brush the top of it with olive oil.

Place chicken in baking dish, brush both sides with olive oil. Season both sides of chicken evenly with the spice mixture. Bake in preheated oven until center of chicken breasts registers 165 on an instant read thermometer, about 16 20 minutes.

Remove from oven and let.Preheat oven to 375°F for before cooking. Brush chicken breasts with olive oil and sprinkle with lemon pepper. salt and pepper.

Bake for 15 minutes on each (160°F). Serve with baked sweet potatoes and green beans or creamed corn.Bottom line, store extra virgin olive oil in opaque containers away from sunlight and heat.
